Apple Strudel Muffins

This is my first recipe in english and is in english because autie Diane (Dev’s aunt) has been making some of my recipes and translating the recipes from spanish to english and from grams to pounds so this recipe is only in cups and spoons and in english. I am open if someone want to correct my english and I hope you enjoy this recipe.

8 Muffins    175ºC/355ºF

For the dough

1 cup of flour

1/2 teaspoon of bakin soda

1/8 teaspoon of salt

1/4 cup of butter room temperature

1/2 cup of sugar

1 egg

1/2 tablespoon of vainilla extract

1 cup of apple (peeled and diced)

1/2 teaspoon of cinnamon

pinch of nutmeg

For the strudel crust

1/4 cup of brown sugar

1/2 tablespoon of flour

1/4 tablespoon of cinnamon

1/2 tablespoon of butter (softened)

Procedure

In a medium bowl mix the flour, the baking soda, salt, nutmeg and cinnamon.

In a large bowl cream the butter with the sugar, when creamed add the egg and the vanilla extract.

Add the dry ingredients to the large bowl and when everything is perfectly combined turn off the mixer and add the diced apple and mix with a hard spatula.

Prepare your mold with the muffin baking cups and fill with the mixture up to 3/4 of the capacity.

For the crust, combine all the ingredients and mix with a fork.

Put some of the crust mixture on top of every muffin

Bake for 30 minutes
